Sweet Potatoes With Cinnamon And Marshmallows

3 lbs of organic sweet potatoes
2 1/2 tbsp of light brown sugar
1 tsp of organic ground cinnamon
1/2 tsp of vanilla extract
2 organic cinnamon sticks
½ tsp of organic ground nutmeg
6 tbsp of unsalted butter
1/2 cup of chopped walnuts, optional
1 cup of mini marshmallows
Coconut oil cooking spray
Preheat oven to 375 degrees. Start measuring out the ingredients, and prepare a medium ceramic baking dish by spraying it with coconut oil cooking spray.
Peel and dice sweet potatoes. Then, place the sweet potatoes in the ceramic baking dish.
Melt the butter, and mix cinnamon, nutmeg, salt, milk, and brown sugar until well combined.
Add the liquid mixture to the sweet potatoes in the ceramic baking dish. Fold until sweet potatoes are coated evenly.
Cover dish with parchment paper, then cover parchment paper with aluminum foil. This is to seal the ceramic baking dish completely so that steam doesn’t escape. That way, the sweet potatoes are baked quickly and evenly.
Bake for 45-55 minutes.
Remove ceramic baking dish from oven, and stir the sweet potato mixture. The sweet potatoes should split easily, but if they are still hard, bake for an additional 15 minutes.
Once the sweet potatoes are baked and stirred, cover them with a layer of the chopped walnuts and mini marshmallows.
Place the ceramic baking dish, uncovered, back into the oven, and bake until the marshmallows begin to brown (usually about 10 minutes).
Remove the ceramic baking dish from oven, and let it cool for 10 minutes before serving.
